Our Story

In March of 2019, Chile Chicken Nashville Hot Chicken was established by three business partners who individually had over 25 years of experience in the food industry varying from food processing, production, restaurants, and merchandising. 

Chile Chicken was the first restaurant in Albuquerque, New Mexico to offer an extensive menu with a focus on Nashville style fried hot chicken and when we say hot, we mean spicy!  However, spicy is not the only option available on the menu.  Customers can choose from six different spice level that suits each person’s preference.  The six options are none (not spicy at all), mild, medium, hot, cluckin’ hot and really cluckin’ hot.  There’s a perfect spice level for everyone even if you opt out and do not want spicy fried chicken.

Our most asked question is, “How hot is hot?”.  Our answer is, “How hot can you handle”?

Here in New Mexico, we often crave and love spicy and hot food, which made Chile Chicken’s Nashville hot chicken a great addition to the land of enchantment. 

We are serving up or famous hot chicken sandwich, juicy chicken & waffles, chicken tenders, chicken strips, chicken fingers, huge chicken nuggets and so much more.  Poutine is hard to come by in Albuquerque, but you will also find it on our menu.  Freshly fried French fries topped by cheese curds and hot brown gravy.

When you choose Chile Chicken, you can rest assure that our chickens are never frozen, no added hormones, no added steroids, no antibiotics ever, hatched and raised cage free.  Our chicken nuggets and tenders are hand cut to order, never frozen and no chicken scraps. Our mash potatoes and gravy are made with real potatoes seasoned with spices and buttered up to perfection.
